Taken from the loin of the pig, they have a generous fat layer on one side and a small piece of bone left in so they will be juicier, as the bone retaining the moisture inside. They make a great speedy meal; however, they can easily become tough and dry if you’re not careful with the temperature or timings. This meat is delicious when griddled, pan-fried, roasted or grilled.
